Homemade Zaleti cookies

Sorry for bad blogging the last week, but I hope I can make it up to you by some new posts. As some of you might, or may not remember, I found these fantastic cookies that I wrote about in an earlier post. 

I couldn't keep myself from trying to make them, so here goes:





They were so easy to make and smells fantastic and I can assure you, they taste great too!

5 : 2 - Intermittent Fasting



Ever heard of it? :)

Anyways, I'd see the Eat, fast and live longer documentary when it aired here in Sweden earlier this spring. The main thing that I really got hooked on was the possibility for the brain to learn to make new interconnections between the cells and therefore you may learn your brain to think in new different ways. Even if that is possible or not with intermittent fasting, the other health benefits makes it worthwhile. I mean, who doesn't want a longer life or less risk of cancer or diabetes?

Intermittent fasting isn't a new thing...it has been around for some time...And yes I've tried it before, but only for a short while and just as part of pre-competition diet and regime.

So now I'm actually on my second week of 5:2 and it feels quite easy having the fast days already.  If you have any questions on how I'm doing the fasting, please feel free to ask me any question.

Homemade pizza


Nothing can be so easy and so absolutely fantastically good tasting as homemade pizza. I've used pesto and a tomato with peperoncini sauce as a base, together with artichokes, mozzarella and topped it off with prosciutto and rucola/roquette/arugula.  The end result you can see below.

"Tunnbrödsrulle" Italian Way


In Italian I think it would be translated to Rotolo di pane piatto/sottile...or something like that. Keep in mind though, that the "Italian Way" here is just mozzarella, basil etc. So what you need is the following:

8 bread slices
250 g mozzarella cheese
4 tomatoes
1 basil plant
25 g pine nuts
2 tbsp olive oil
4 pinches of salt
2-4 tbsp olive oil for frying
(I would opt for some prosciutto also)

Then you only have to do the following steps:

An evening with Italian TV


Today I'll be watching the last episode (of season two called "Still hungry") of the humorous food series "Two Greedy Italians". In this episode, called "Lazio and Machismo", Gennaro and Antonio look at the evolution of the role of the Italian man. Read more about the series at BBC's website.

And if that wasn't enough, episode one of season nine of "Montalbano" will air today.

Antipasto and Rhubarb Raspberry Pie




 Last weekend I put together some sweet things I've been longing for. For the antipasti you'll find prosciutto, cantalope melon, crostini, tapenade, fennel salami, mortadella, primadonna, grüyere, manchego, garlic bread, some wine and a lovely sweet and sour pie. Best of everything!

Sopapilla - Mexican Cheesecake




Some time ago I came across an alternative frozen "sopapilla" that I made, with condensed milk and lime, so this time I've incorporated those ingredients in this version of my Mexican cheesecake. If you haven't tried it yet, you really have to! Your palate will thank you for it.

Ravioli con ricotta, funghi, pancetta e noci


Here is the result from last weeks desire of my wanting to do my own very first pasta and also ravioli! I just love all the ingredients. It took some time and the pasta wasn't easy to do, but well worth the time spent.

I remember back in the days (80s) when I first tasted canned ravioli - it was very popular back then - and I asked why is that (I still wonder)? Never got any answers. But today I'll try to make my own ravioli and my very first pasta. Either with lemon and ricotta or one with mushroom. Or maybe a filling of Portobello, feta cheese and walnuts! Hmmm I'll get back to you on this one!

Waffle day



Today is Waffle Day here in Sweden. The standard for most I think is the above brand Ekströms with their "Frasvåfflor", they are anyway the leading brand. I haven't eaten any real ones yet but, probably will on friday. After running a few k's. Love 'em waffles! =)

Banana pancakes


I've been wanting to try banana pancakes for some time now and finally got to it. Crazy good. Now I'm asking myself, why I didn't try it before, since it's so much healthier than the usual ones that have loads of flour.

...gick sådär. Tror jag får "starta om" den. Annars avvaktar jag till efter kanelbullens dag, för jag måste bara ha hemmagjorda kanelbullar. Ljumma + glas mjölk = kommer aldrig bli för gammal för det...
